History
In 1888, seven ambitious Queenslanders had a vision to transform the region’s thriving sugar industry into something extraordinary. With a team of just five men, the Bundaberg Distillery was established, marking the birth of what would become one of Australia’s most iconic spirits. At a time when rum was already popular, though often unrefined, the Bundaberg Distillery set out to create an improved, quality product that the nation could be proud of.
Setting the tone for the company’s future ambitions, the distillery didn’t start small. In 1889, Bundaberg Rum’s first batch comprised a staggering 22,500 gallons. Today, a bottle from that inaugural batch would be worth a small fortune – an impressive endorsement of the pioneering spirit of its founders.
Disaster struck in 1936 when a lightning strike hit the distillery, leading to an explosion that destroyed the facility. Millions of litres of molasses spilled into the nearby Burnett River, igniting its surface and creating a fiery scene that local lore still recounts. Although the flames caused devastation, the disaster afforded the opportunity for the community to demonstrate incredible resilience in its commitment to rebuilding.
By 1939, after three years of dedicated reconstruction, the distillery rose from the ashes, restored to its former glory. The structure that visitors see today is the same one rebuilt during that time, standing as a symbol of endurance and renewal – albeit with a number of modern upgrades over the years.
In 1961, Bundaberg’s iconic branding took on its familiar shape under the direction of Sam McMahon, a talented marketer and brother of future Australian prime minister, William McMahon. Sam introduced the now-famous square bottle and the polar bear mascot, which symbolised the rum’s premium quality – so smooth it could be enjoyed even in the Arctic. The polar bear remains the beloved emblem of Bundaberg Rum, tying together the brand’s identity with the meaning of the name “McMahon”, which in Irish means “Son of Bear”.
In 1974, Bundaberg Distillery brought its bottling operations in-house, taking full control of its product’s production and packaging. This decision ensured every bottle bore the unmistakable Bundy label and polar bear, and met the distillery’s high production standards, a proud testament to the distillery’s craftsmanship and commitment to quality.
Fast forwarding to the modern era, the Bundaberg Distillery has evolved into more than just a production facility. In 2005, a 2.5-million-dollar expansion marked the beginning of its transformation into a world-class visitor attraction. By 2016, after an 8.5-million-dollar redevelopment, the Bundaberg Rum Visitor Experience was unveiled, offering guests a deeper insight into the brand’s rich history and innovative spirit.
Today, the Bundaberg Distillery stands as a monument to resilience, creativity and craftsmanship. It’s more than just a place where rum is made— it’s a living, thriving piece of Australian heritage, inviting visitors from around the world to explore its history, witness its production and taste the spirit of Bundaberg.
The Secrets behind Bundy Rum
For those lucky enough to step inside the distillery, a fascinating world of transformation unfolds, where the simplest ingredients are turned into Australia’s most celebrated spirit. Over the years, Bundaberg has perfected this process, blending science and tradition – not to mention a hint of cheeky ingenuity – to create something truly exceptional.
It all begins with molasses, the thick, dark byproduct of sugarcane processing. While it may not look glamorous, this sweet substance is the foundation of Bundaberg Rum. Each year, from June to December, we pump enough molasses to fill four Olympic-sized swimming pools directly into the distillery through underground pipes from the sugar mill across the road. The very first step is for the molasses to be thoroughly cleaned in a process called clarification.
Next comes fermentation, where molasses meets water and yeast to begin its transformation into alcohol. The yeast we use, Scharomycaces cerevisiae (PRON: ‘sa-kuh-row-mai-sees seh-ruh-vi-see-ai’) – also known as brewer’s or baker’s yeast – is cultivated on-site, ensuring consistency and quality. After about 36 hours of preparation, it’s ready to join the molasses and water in our fermentation tanks. Over the course of two days, this mixture ferments to about 8% alcohol, laying the groundwork for the next phase: distillation.
Distillation is where the science of rum-making comes into its own. The fermented mixture is first introduced to a wash column, where steam eliminates impurities. It then moves to a pot still – a kettle-like vessel – for a second distillation. This step is all about precision, as only the best portion of the vapours – the “heart cut” – is collected and condensed into raw rum. This unrefined spirit is the beginning of what will eventually become Bundaberg Rum.
The raw rum, now at 78% alcohol, is transferred into Appalachian Range white oak vats for maturation. This is where time works its magic as the wood’s tannins seep into the rum, imparting its signature flavour and golden hue. This process takes a minimum of two years, but some rums stay in barrels longer to develop more complex profiles, such as Bundy Spiced or selections from our Master Distillers’ Collection.
Finally, the matured rum is blended with pure demineralised water to reach bottling strength. At our state-of-the-art facility, we can produce up to 120 bottles per minute. Each bottle is carefully washed, filled, capped and prepared for distribution. From start to finish, every step of the process reflects the passion and expertise that have made Bundaberg Rum a household name in Australia and famous around the globe.

Sustainability
At Bundaberg Rum, sustainability is more than a commitment – it’s a way of life. Guided by the ambitious 10-year sustainability action plan, “Society 2030: Spirit of Progress”, our parent company Diageo has set bold goals to achieve net zero carbon emissions across our direct operations, including the Bundaberg Distillery, by 2030 and the entire business value chain by 2050. The plan also includes reducing water usage by 30% per drink, using 60% recycled materials and ensuring 100% of our packaging is widely recyclable.
Significant strides have already been made toward these targets. In 2020, we installed a 160-kilowatt solar system on the roof of our Distillery Visitor Experience Centre and carpark. This solar initiative has reduced our electricity consumption from the grid by approximately 260-megawatt hours annually, cutting over 200 tonnes of carbon dioxide emissions, which is equivalent to the energy needed to charge over 20 million smartphones. While it’s just one step, it reflects our ongoing dedication to sustainable progress.
In June 2023, the Bundaberg Rum Visitor Experience became the first tourism operation in Australia to receive a global standard sustainability certification through Ecotourism Australia’s new Sustainable Tourism Certification. This prestigious certification assures our customers and visitors that every aspect of our operation adheres to international best-practice sustainability standards. From minimising environmental impacts to supporting the local community and economy, we strive to create a visitor experience that not only celebrates the spirit of Bundaberg but also contributes positively to the world around us.
